When following the Eczema Detox programs, we suggest keeping sweet treats to a minimum, however a sweet treat is needed every now and then, especially when the skin begins healing, so we have designed a sweet potato doughnut recipe for you that is not too sweet but damn good.
Sweet potatoes (also called kumara) are rich in vitamin C, B vitamins, manganese and beta- carotene which is an important antioxidant that can increase your skin's hydration and resilience against UV sun damage.
This recipe is not suitable for those on the FID program (Food Intolerance Diagnosis Program).
Pear or apple puree can be trialled instead of banana if banana is not tolerated. Pumpkin can be trialled instead of sweet potato if sweet potato is not tolerated.
1/3 cup of sweet potato (boiled and mashed)
1/2 mashed banana
1 ½ cups of oat flour
1/2 cup of oat milk or other milk of choice such as rice or cashew milk
1 tablespoon of rice bran oil or sunflower oil
¼ cup plus 2 tablespoons of maple syrup
1 tsp baking powder
1 teaspoon of pure vanilla
Pre heat oven to 175 deg C (350 deg F)
Grease a donut pan with rice bran oil or sunflower oil and set aside.
In a medium sized mixing bowl, add the mashed sweet potato and banana and mix together well. Then add the milk, vanilla, maple syrup and rice bran oil and whisk together well.
Mix baking powder into the oat flour then add to the bowl of wet ingredients and fold mixture together well. The mixture thickens quickly and can be hard to then spoon into the donut pan so try to do this straight after folding the mixture.
Using a tablespoon, place the mixture evenly into each doughnut groove, if there is leftover mixture you can cook more doughnuts after the first batch has cooked, just add a little dash of extra milk if the mixture thickens too much whilst waiting for the first bath to cook.
Place in the oven for about 17 minutes or until doughnuts are cooked and a toothpick comes out clean.
Allow to slightly cool before removing, then top with your choice of toppings. As the Doughnut are not too sweet we recommend a slightly sweeter topping, especially if your skin is clearing well. This can include salted caramel nut butter, carob nutella, maple sugar, maple syrup or beetroot cashew butter.
